Executive Chef Joshua Ketner
Chef Ketner previously worked as Executive Chef of the highly acclaimed “Hilo Bay Café” on the Big Island of Hawaii, where for over 10 years he helped bring traditional Hawaiian cuisine and Pacific Rim fusion to new heights, earning it the “Hale ‘Aina Award” for “Best Big Island Restaurant” four times. Ketner has also generated national media attention in magazines such as Food and Wine, Gourmet, and Sunset Magazine and is included in the 2013 edition of Best Chefs of America.
With over 20 years in the restaurant business, Ketner brings a wealth of operational knowledge and creativity to the kitchen team at Peerless Restaurant. He has worked in every facet of the kitchen, beginning at age 14 as a dishwasher and working up to line cook and kitchen manager. He has worked at several prestigious restaurants in Hawaii; including Mama’s Fish House on Maui; where he developed an understanding and deep appreciation for working with local fruits, vegetables and fresh fish.
